Easy Dinner Recipes for Busy Lives: Chicken Lo Mein

Okay, by now you all know I love food and I love simple recipes that align with my nutrition knowledge: meals that are well-balanced, filled with a multitude of veggies and can be made in no time! Whether you're doing a single serving or feeding a family of six, this Lo Mein is delicious, inexpensive, versatile and so comforting. It takes very little time- which I know is a must for those of us who just feel like collapsing with some food as soon as we get home and it is so easy to make, if you don't enjoy cooking or are trying to cook more, this is a great recipe to start with. Recipe
Ingredients:Â
8oz of Wide Lo Mein Noodles
1/2 Teaspoon Sesame Oil
1 Teaspoon Canola Oil
1 Tablespoon Oyster Sauce
1 Tablespoon Soy Sauce
1 Tablespoon Sriracha optional
3 thinly sliced chicken breastsÂ
1 Teaspoon minced ginger
2 cloves minced garlic
1/2 onion thinly sliced
1 carrot thinly sliced
2 bunches bok choyÂ
1 scallion choppedÂ
1/2 cup shredded cabbageÂ
1/2 cup bean sproutsÂ
Salt and pepper to taste
1) Cook the noodles until al dente and set aside along with a small amount of water from the noodle pot
2) Heat canola oil and sesame oil on medium heat in wok or large skillet until fragrant
3) Add minced garlic, ginger, onion and stir. Let it sautĂ© for a minute.Â
4) Add in chicken and cook through (5-7 minutes depending on thickness). If desired, season chicken lightly with salt and pepper
5) Add in bok choy, cabbage, carrots and sprouts until it starts to soften
6) Add in soy sauce, oyster sauce, sriracha and tossÂ
7) Add cooked noodles, toss it altogether
8) Add scallions to the topÂ
*Adjust measurements depending on how many you're feeding (This recipe usually feeds 3 people)
And you're done! Altogether, this meal takes me about 20 minutes to cook; including the time it takes for the water to boil and to chop everything. It is simple and delicious and you can add whatever protein or veggies you like! If you give it a try, let me know! You will not regret it :)
